So tonight we made the Sugared Stone Fruits with Cookies and Cream. It was pretty simple, but very delicious. The fresh peaches tasted incredible. Instead of Nilla wafers or ginger snaps, we used some really good square coconut cookies.

The Challenge...

A la "Julie & Julia," we will prepare every recipe in Rachael Ray's "30 Minute Meals 2" book (that's 278 recipes) by Natalie's high school graduation on May 14, 2011. We will rate each recipe on a 1-5 star basis, and we will post the recipes that garnish the coveted 5-star award.

Rules: We must taste EVERY dish, even the fish ones (Natalie says "EWWW") and the spicy ones (Lani says "EWWW"). You'll soon see that we're human. Rarely do things go exactly according to the recipe, and VERY rarely does our 30-minute meal take only 30 minutes to create. With EHH (Eternally-Hungry Husband) and two hungry cross-country runners on hand as taste-testers, we quickly sort out the great from the not-so-great.

So, sit back and enjoy the ride!
